The meat and eggs of chickens are widely eaten by people across the world. Many people who consume animal products would like to choose products from animals kept in higher welfare systems. However welfare labelling on products can be confusing. What ever it is country chicken is always good.
For marination:
1/2 chicken broiler-skinned and cut into pieces
11/2 tsp red chili powder
1/2 tsp turmeric powder
11/2 tsp chicken powder
1 tsp ginger paste
1 tsp garlic paste
1/2 cup yoghurt
1 1/2 tsp salt
For making gravy:
1 tbsp oil
1 bay leaf
1 cinnamon stick
3 cloves
1 cup big onions grated
1 inch ginger chopped
3 garlic flakes chopped
1 big size tomato
1/2 tsp green cardamom powder
1/2 fennel powder
1 tbsp coriander powder
Finely chopped coriander and mint leaves as u wish
1 cup thick coconut milk
Marination Procedure
Clean the chicken pieces and mix together with the powdered spices, chili powder, turmeric, ginger-garlic paste, yoghurt and salt. And set aside for 2 hrs.Cut lightly into the chicken so the flavors get inside the meat and can be absorbed into its juices. This will give the chicken an enhanced flavour.
Gravy Procedure:
Heat oil and add all the herbs(Crushed ones gives nice aroma).
Followed by onions,chopped ginger&garlic. Once all turns golden,add chopped tomatoes saute till cooked.
Add marinated chicken coriander,fennel and cardamom powders and saute for 2 minutes.
Add in the soaked chicken and add required amount of water. Check with salt if u need more add in this stage, and cover with lid.
Cook covered on high heat. Open after 15 minutes it is cooked halfway, now add cilantro and mint leaves and close again( if u don't want to add mint leaves, u can add curry leaves).
Lower the heat to medium-high and cook covered for 12 minutes or until cooked through. At around 10 minutes, pierce into a large piece of chicken to see if it's done. If it's white all the way through, it's ready.
Finally add coconut milk. Bring to boil and its done.
This dish goes incredibly well with any main dish. Best serve hot.
Note:
If u add curry leaves, don't add cashews.
If using country chicken, add shallots instead of big onions and replace mint leaves with curry leaves.
